Wild Game Sauce

Grilled Salmon with
Chatellier's Glaze

Serves 4

Fresh salmon prepared with Chatellier's is hard to beat. Enjoy with a nice white wine, family and friends. Leave the dishes - they can wait.


Preheat grill to 400 degrees.
Brush salmon fillet with olive oil, sprinkle with salt and pepper.

Grill fillet skin side up for 3-5 minutes with cover on. Flip carefully using two or more spatulas. Sprinkle with lemon juice, cover and grill for 3-5 minutes - or until fillet can be pierced by fork with little resistance.

Using two spatulas, lift the cooked flesh off of the charred skin, leaving the skin on the grill to be scraped or burned off later. If fillet is very large, cut into two pieces to remove.

Place fillet on serving platter or cutting board and finish by brushing with warmed Chatellier’s.

Serve immediately.
